S.W. Recipe: Date Energy Balls

When we’re really busy, our healthy eating habits tend to fall by the wayside; snacking digresses into a handful of chocolate covered raisins, a bunch of chips, or – worse of all – an iced latte. All of these snacks, while tasty going down, leave us feeling lethargic, kind of guilty, and totally hungry.

 

So you can imagine how delighted we were to discover these date and nut energy balls. We found this complex-sounding, easy-to-make recipe from our girl Lee From America and are calling ourselves utterly reformed. Featuring dates, cashews, and the topping of your choice (we chose granola and muesli), these snacks are both wholesome and dummy-proof to create. Better yet: The mixture of salty and sweet satisfies our snacking desires, while actually filling us up. Here’s the recipe:

INGREDIENTS

  • 10 pitted dates, soaked in water for at least 10 minutes
  • 1/4 cup cashews, or any nut of your choice.
  • Your choice of topping! (Ideas: granola, coconut shreds, peanut butter, chocolate chips)

 

METHOD

Mix nuts and dates together in a food processor until they’ve reached a dough-like consistency. Roll into balls, and store covered in your fridge for up to two weeks.
